We’ve created a simple, no-added-sugar recipe with fresh blackberry jelly to help busy families enjoy a nutritious, fuss-free breakfast that children will love.
Ingredients
4 cups of self-raising flour
3 1/4 cup of oat milk
1 tsp vanilla extract
1 1/2 tbsp oil
1 tsp baking powder
3-4 medium, ripe bananas
2 cups of blackberries
Directions
Defrost the blackberries
Peel and blend the bananas
Combine the flour, baking powder, oat milk and vanilla extract with the oil and banana puree to create a smooth batter.
Heat a frying pan and cook the pancakes - alternatively, these can be baked in the oven on a baking tray.
Once cooked, put aside until serving.
Heat the blackberries and blend to a smooth texture for the blackberry jelly.
Serve the pancakes topped with the jam - add a dollop of Greek yogurt for a finishing touch!
