Ingredients
1 cup soft Medjool dates, pitted
1 cup pumpkin seeds
2 tbsp high-quality raw cacao powder
1 tbsp coconut oil (melted)
1/2 tsp vanilla extract
A pinch of sea salt
1/2 cup rolled oats (for coating)
Directions
Place the pumpkin seeds in a food processor and pulse until they reach a fine crumb consistency.
Add the pitted dates, cacao powder, melted coconut oil, vanilla, and salt. Process until the mixture forms a sticky dough that holds together when pinched. If it’s too dry, add a teaspoon of water.
Roll tablespoon-sized portions of the dough between your palms to create smooth, even spheres.
Place your pulsed oats in a shallow bowl. Roll each ball through the oats until lightly and evenly coated.
Place the bites in the fridge for at least 30 minutes to firm up.
